To prepare this healthy and delicious Dal Baati for 4 servings, gather the following ingredients:

For The Batis

  • 1/2 cup of semolina (rava/sooji)
  • 2 tbsp of bengal gram flour (besan)
  • 1 cup of coarse whole wheat flour (gheun ka atta)
  • 1/2 cup of milk
  • 4 tbsp of melted ghee
  • 1/4 tsp of carom seeds (ajwain)
  • 1 tsp fennel seeds (saunf)
  • ghee for deep-frying
  • salt to taste

For the Dal

  • 5 tbsp green moong dal (split green gram)
  • 5 tbsp toovar (arhar) dal
  • 5 tbsp chana dal (split bengal gram)
  • 1 tbsp urad dal (split black lentils)
  • 3 tbsp ghee
  • 2 cloves (laung)
  • 2 bayleaves (tejpatta)
  • 1 tsp cumin seeds (jeera)
  • 1 tsp garlic paste (lehsun paste)
  • 2 green chillies
  • salt to taste
  • a pinch of asafoetida (hing)
  • 1 tsp of coriander powder (dhania powder)
  • 1 tbsp of chilli powder (mirchi powder)
  • 1/2 tsp garam masala
  • 1/2 tsp turmeric powder (haldi powder)
  • 1 cup of finely chopped tomatoes
  • 1 cup of finely chopped onions
  • 1 tbsp finely chopped coriander (dhania)

Instructions to prepare Dal Bati:

Now that you know what you want, let’s get into the kitchen and prepare it.

For Bati:

  1. In a large mixing bowl, combine wheat flour, milk, semolina, carom seeds, cumin seeds, and a pinch of salt. Mix well.
  2. Gradually add ghee to the flour mixture and mix it using your fingers until the mixture resembles coarse crumbs.
  3. Add water little by little and knead the mixture to form a stiff yet smooth dough. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
  4. Preheat your oven to 375°F (190°C) or set up a steamer on the stovetop.
  5. Divide the dough into small lemon-sized balls and shape them into round discs or oval shapes.
  6. For Baking: Place the bati on a baking tray and bake them for 25-30 minutes or until they turn golden brown and crisp.For Steaming: Place the batis in a steamer and steam them for 20-25 minutes until they are fully cooked.
  7. Once the batis are ready, take them out of the oven/steamer and brush them with ghee for added flavor.

For Dal:

  1. Rinse the mixed lentils thoroughly and soak them in water for 30 minutes. Drain the water before cooking.
  2. In a pressure cooker or a deep pan, add the soaked lentils, water, ginger-garlic paste, turmeric powder, and salt. Cook the lentils until they become soft and mushy.
  3. In a separate pan, heat ghee and add cumin seeds. Allow them to splutter, then add chopped onions and sauté until they turn translucent.
  4. Add chopped tomatoes, red chili powder, coriander powder, cumin powder, and garam masala to the pan. Cook the masala until the tomatoes are soft and the oil starts to separate.
  5. Mix the cooked masala with the boiled lentils and simmer the dal for 5-10 minutes to let the flavors meld.

Serving:
